  • Bitter gourd ( cut finely) – 1 cup
  • Small onion ( cut finely) – 1 cup
  • Garlic – 6 pods
  • Water – 3 cups
  • Coconut milk – 1 cup
  • Pepper powder – 1/2 tsp
  • Salt – as needed
  • Oil – as needed

Method

  • First heat oil in a frying pan.
  • Now add bitter gourd and fry on a medium flame for 10 minutes.
  • Now add onion, crushed garlic, salt, pepper powder and fry for a few minutes.
  • Add water and cook.
  • When the bitter gourd is cooked switch off the stove.
  • Add coconut milk and serve.
  • Your soup is ready to serve.

  • leeks, trimmed, split in half lengthwise and well rinsed ——–1 cup
  • white onion, chopped ——— 1 medium
  • carrots, peeled and thinly sliced on the diagonal ——- 1 cup
  • celery ribs, thinly sliced on the diagonal —— 2 large
  • dried lentils ——– 2 tbsp
  • Split peas (dried) ———- 2 tsp
  • dried small white beans ——- 2 tbsp
  • crushed dried thyme ——– 1 tsp
  • freshly ground pepper ——- ½ tsp
  • low-sodium canned chicken or vegetable broth ——– 2 liter or 8 cups
  • no salt added plum tomatoes, drained and coarsely chopped ———- 4 cups or ready made can
  • fresh spinach, well rinsed and tough stems discarded —— ½ cup

Method

  • First In a large soup pot, heat oil over medium-low heat.
  • Now add leeks and onion to pot .
  • Cook, stirring, until vegetables wilt (about 5 minutes).
  • Now add remaining ingredients, except tomatoes and spinach. Bring to a boil. Decrease the heat and simmer and cover it for 45 minutes. Stir occasionally.
  • After that Add tomatoes and continue to simmer, covered, for another 15 minutes, until white beans are tender.
  • Now add spinach and simmer, uncovered, until wilted, about 3 minutes, stirring.
  • Put into soup bowls .
  • Your soup is ready to serve.

Method

  • Put shredded carrot, canola oil, rice vinegar, white miso, chopped onion, chopped fresh ginger and soy sauce in a food processor and squash until smooth. You can use blender.

  • Hot water———- 1 ½ cups
  • Dried basil or marjoram ———— 1 tsp
  • Fresh or frozen cheese (or meat) ravioli, preferably whole-wheat ———- 16 to 9 ounce
  • Diced zucchini, (about 2 medium) ————- 2 cups
  • Freshly ground pepper to taste

Method

  • Put Oil in a large sauce pan and heat it in a medium flame.
  • Add frozen bell pepper-onion mix, minced garlic and crushed red pepper and cook & stir for 1 minute. Put crushed tomatoes, vegetable broth or reduced-sodium chicken broth, water and basil (or marjoram); make to a rolling boil over high heat.
  • Pour ravioli and cook it for 3 minutes and follow as less than the package directions.
  • Add diced zucchini; return to a boil. Cook the zucchini until it is to crisp-tender about 3 minutes. Season with pepper.

  • Low fat milk {toned or double toned(refer note)}—— ¼ cup

Method

  • First heat oil in a pan, add the onions in it.
  • Sauté it on a medium flame for 1 to 2 minutes.
  • Now add potatoes, asparagus and vegetable stock in it. Bring to boil. Now Cover and cook on a slow flame for 8 minutes or till the potatoes are cooked.
  • Allow the mixture to cool and then blend in a mixer to a smooth puree using 2 cups of water.

Ingredients

  • Lemon grass (harechai ki patti) 2 1/2 stalks
  • Coriander (dhania) 5 stalks
  • Seasoning cube (veg.) 1
  • Garlic (lehsun) crushed 3 1/2 cloves
  • Ginger (adrak) 1″ (cut into big pieces)
  • Green chillies 1 1/2 pcs
  • Mushrooms (khumbh) 4 pcs (sliced)
  • Sliced baby corn 1/8 cup (sliced)
  • Salt to taste
  • Lemon juice 1/2 tsp
  • For Serving
  • Spring onions (chopped) 1 tbsp
  • Chopped coriander (chopped) 1 tbsp
  • Carrot 1 tbsp (cut into thin strips)

Method

  • Bind the lemon grass (harechai ki patti) stalks and coriander (dhania) together using some lemon grass and keep it aside.
  • First Boil 5 cups of water in a deep pan,
  • add the seasoning cube, garlic, ginger and lemon grass-coriander bunch, cover and simmer for 15 minutes or till the mixture releases fragrance.
  • Now Strain and discard the garlic, ginger, lemon grass and coriander. Reserve the liquid.
  • Add the green chilies, mushrooms, baby corn and salt, mix well, cover with a lid and simmer for another 5 minutes.
  • Add the lemon juice before serving and mix well.
  • Put the chopped spring onions, chopped coriander and stripped carrot in a serving bowl and pour the hot soup over them.
  • Serve immediately.

7.Veg Manchow Soup | Indo Chinese Soup

Veg Manchow Soup | Indo Chinese Soup

Ingredients

  • 2 tbsp oil
  • 1tbsp crushed ginger garlic.
  • 1 chopped green chilly.
  • 2-3 spring onions.
  • Some sprigs
  • 1 chopped capsicum.
  • Carrots, french beans and celery.
  • 1 big bowl of cabbabge, sliced lenght wise.
  • 2 tbsp corn flour
  • 2tbsp chilly sauce.
  • 1 sizzling cube, this is a veg sizzling cube it’s avavilabe in the market.
  • 1 tbsp soy sauce
  • Salt to taste.
  • Some fried noodles.

Method

  • Add 2 tbsp oil in a pan. Don’t need to wait for the oil to be heated.
  • Now, take 1tbsp crushed ginger garlic, 1 chopped green chilly and mix this a little.
  • Then, take 2-3 spring onions, some sprigs (keep remaining for the garnish), 1 chopped capsicum, carrots, french beans, celery, 1 big bowl of sliced cabbabge and mix all of this well.
  • Keep it slightly uncooked.While this is getting cooked, take 4 cups of water in a bowl.
  • Add the 2 tbsp corn flour to cold water, if addded to warm water it forms lumps.
  • Now, to this add 2tbsp chilly sauce, 1 veg sizzling cube and soak this in the water 15-20 minutes prior.
  • Now, take 1 tbsp soy sauce and salt to taste and add this mixture to the vegetables and let this to boil.
  • Keep stirring it otherwise the corn flour will stick to the bottom.
  • You will know it’s done when it starts becoming transparent. Let’s wait for 5 minutes now.
  • 5 minutes later, it has come to a boil, the soup is ready.
  • Let’s switch the gas off and remove it into a bowl.
  • And now, on this use the remaining sprigs for the garnish and some fried noodles.
